COOKING & PREPARATION:
1. Thaw the Lamb: Start by defrosting the frozen lamb shoulder in the refrigerator for several hours, ideally overnight. This ensures even cooking and the best flavor.
2. Prepare Your Ingredients: While the lamb is thawing, prepare your shabu shabu ingredients. You can use a variety of vegetables like Napa cabbage, mushrooms, and tofu. Slice them into bite-sized pieces.
3. Boil Water: Fill a shabu shabu pot or a large saucepan with water and bring it to a boil. You can also add shabu shabu broth or a combination of water and dashi for extra flavor.
4. Cook the Lamb: Once the lamb is thawed, separate the slices. When the water is boiling, use chopsticks or a cooking utensil to submerge the lamb slices in the hot water. Lamb shoulder shabu cooks very quickly, usually within 30 seconds to 1 minute, depending on how thinly it’s sliced. When the slices change color and become tender, they are ready.
