COOKING & PREPARATION:
1. Clean and Prepare the Beef Tendon:
• Rinse the beef tendon under cold water to remove any excess blood or impurities. Pat it dry with paper towels.
2. Blanch the Beef Tendon (Optional):
• Blanching the beef tendon can help remove some of the impurities and reduce the cooking time. To blanch, place the beef tendon in a pot of boiling water and cook for about 5 minutes. Then, drain the water and rinse the beef tendon under cold water.
3. Prepare the Cooking Liquid:
• In a large pot or pressure cooker, prepare the cooking liquid. You can use beef broth, water, or a combination of both. Add aromatic ingredients like onions, garlic, ginger, and spices such as star anise, cinnamon, or bay leaves to enhance the flavour.
4. Cook the Beef Tendon:
• Place the beef tendon in the pot with the cooking liquid. If using a regular pot, bring the liquid to a boil, then reduce the heat to low, cover, and let it simmer gently for several hours. This slow-cooking process allows the beef tendon to become tender and develop its gelatinous texture.
• If using a pressure cooker, follow the manufacturer’s instructions for cooking times. Pressure cooking significantly reduces the cooking time and can yield tender beef tendon in a fraction of the time.
5. Check for Doneness:
• After the cooking time is complete, check the beef tendon for tenderness. It should be soft and gelatinous but not overly mushy.
6. Serve and Enjoy:
