COOKING & PREPARATION:
Herb-Crusted Frenched Lamb Rack
Ingredients:
1 Frenched Lamb Rack (about 1.5 lbs)
2 tbsp olive oil
2 cloves garlic, minced
2 tbsp Dijon mustard
1 cup fresh herbs (such as rosemary, thyme, and parsley), finely chopped
1 cup breadcrumbs (optional for extra crunch)
Salt and pepper to taste
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Lamb: Pat the lamb rack dry with paper towels. Season generously with salt and pepper.
Sear the Lamb: In an oven-safe skillet, heat olive oil over medium-high heat. Sear the lamb rack for 2-3 minutes on each side until nicely browned.
Make the Herb Mixture: In a bowl, combine the minced garlic, Dijon mustard, chopped herbs, and breadcrumbs (if using). Mix well to create a paste.
Coat the Lamb: Remove the lamb from the skillet and brush the mustard-herb mixture evenly over the meat.
Roast: Transfer the skillet to the preheated oven. Roast for about 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust time based on your preferred doneness.
Rest the Meat: Remove the lamb from the oven and let it rest for 5-10 minutes before slicing.
Serve: Slice between the bones and serve with your favorite sides, such as roasted vegetables or mashed potatoes.
