COOKING & PREPARATION:

Ingredients:

– 1 whole chicken (about 3-4 pounds)

– 1 onion, peeled and halved

– 2 carrots, chopped

– 2 celery stalks, chopped

– 3-4 cloves of garlic, smashed

– Fresh herbs (e.g., parsley, thyme, bay leaves)

– Water

– Salt and pepper to taste

Instructions:

1. Rinse the chicken: Start by rinsing the chicken under cold water and removing any giblets from the cavity.

2. Place chicken in a large pot: Put the whole chicken in a large stockpot or Dutch oven.

3. Add vegetables and herbs: Add the onion, carrots, celery, garlic, and fresh herbs to the pot. These ingredients will add depth of flavor to your broth.

4. Cover with water: Pour enough cold water over the chicken to cover it by about 2 inches. The water is the base of your broth.

5. Season: Season with salt and pepper to taste. You can always adjust the seasoning later, so start with a moderate amount.

6. Bring to a simmer: Place the pot on the stove over medium-high heat and bring it to a gentle simmer. Don’t let it boil vigorously; you want a slow simmer.

7. Skim impurities: As the broth simmers, foam and impurities may rise to the surface. Skim these off with a ladle or spoon to keep your broth clear and clean.

8. Simmer for hours: Allow the chicken broth to simmer for at least 3-4 hours, or longer if you have the time. The longer it simmers, the richer the flavor will be.
