COOKING & PREPARATION:

1. Thawing:

• Remove the frozen Ox Tail from its packaging and place it in the refrigerator. Allow it to thaw slowly over the course of 24 to 48 hours. Thawing in the refrigerator helps maintain the quality and safety of the meat.

2. Preparation:

• Once the Ox Tail is fully thawed, pat it dry with paper towels. This will help achieve better browning during cooking.

3. Braising Method:

• Preheat a heavy-bottomed pot or Dutch oven over medium-high heat.

• Add a small amount of oil and sear the Ox Tail pieces on all sides until they are browned. This step enhances the flavour and colour of the final dish.

• Remove the seared Ox Tail from the pot and set them aside.

• In the same pot, add aromatic vegetables like onions, carrots, and celery. Sauté until softened.

• Return the Ox Tail to the pot and add your choice of liquids such as broth, wine, or a combination of both. The liquid should cover the Ox Tail partially.

• Add herbs, spices, and seasonings to the pot, according to your taste preferences.

• Cover the pot with a lid and reduce the heat to low. Allow the Ox Tail to simmer gently for several hours, or until the meat is tender and falls off the bone.

4. Slow Cooker Method:

• Sear the Ox Tail as mentioned above.

• Transfer the seared Ox Tail and sautéed vegetables to a slow cooker.

• Add the liquid, herbs, and seasonings.

• Cover the slow cooker and cook on low heat for 6-8 hours, or until the Ox Tail is tender.

5. Serving:

• Once the Ox Tail is tender and fully cooked, remove it from the cooking liquid.

• Serve the Ox Tail with the flavourful cooking liquid as a sauce or gravy. It pairs well with rice, mashed potatoes, noodles, or crusty bread.
