Soft Oatmeal Cookies

Do I see cookies?

Lets trick ourselves into eating oats. These cookies are not only tasty, they provide a small amount of protein that is typically not present in other type of cookies.


1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon


1. In a large bowl, cream together butter, white sugar, and brown sugar.

2. Beat in eggs one at a time, then add in vanilla and stir.

3. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture.

4.Mix in the oats. Cover, and chill dough for at least one hour.

5. Preheat the oven to 190 degrees C.

6. Roll the dough into ping-pong sized balls, and place 5 cm apart on a baking sheets lined with parchment paper. Flatten each cookie with a large fork dipped in sugar.

7. Bake for 8 to 10 minutes in preheated oven.

8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips: Add chocolate chips or raisins for a more flavourful cookies.
